A kitchen needs three layers on separate switches: ambient light for general illumination, task light directly over work surfaces — especially under the upper cabinets — and accent light for depth. Recessed cans alone put your own shadow on every countertop, which is why under-cabinet lighting is the highest-return fixture in a kitchen.

The rule is that each layer gets its own switch. A kitchen where everything comes on at once has one setting, and it is the wrong one for most of the day.
Why under-cabinet lighting matters most
Ceiling lights sit behind you when you face a counter, which means your own body casts a shadow onto exactly the surface you are trying to use. No amount of additional ceiling light fixes it — more cans make a brighter shadow.
Under-cabinet lighting comes from in front and below the upper cabinets, landing on the counter directly. It is inexpensive, it is the single most-noticed lighting upgrade, and it should be planned during construction so the wiring is in the wall rather than a cord running down the backsplash.
Mount the strip toward the front edge of the cabinet bottom, not the back — a strip pushed to the back reflects off the backsplash into your eyes.
Recessed can layout
Space cans roughly 4 feet apart for 8-foot ceilings, adjusting for higher ceilings, and pull them away from the wall by about half that — roughly 24 to 30 inches — so the light washes the cabinet faces rather than the floor at the toe kick. Cans directly over the front edge of the counter give better working light than cans centered in the room.
Use 3000K for a warm, residential look, or 3500K for a crisper, more contemporary feel. What matters more than the exact number is that every bulb in the kitchen is the same color temperature — mixed temperatures are what make a kitchen look unfinished at night. Look for a high color rendering index so food and finishes look right.
Pendants over an island
Hang the bottom of the pendant roughly 30 to 36 inches above the counter — high enough to see across, low enough to light the surface. For sizing, two larger pendants generally read better than three small ones on an island under 8 feet; three suit a longer island. Keep them aligned with the island centerline and evenly spaced from the ends, not from the room.
Put everything on dimmers
A kitchen at 7 a.m., at dinner prep, and at 10 p.m. wants three completely different light levels. Dimmers on every layer cost very little during construction and change how the room feels more than any single fixture choice. Toe-kick or in-cabinet accent lighting on its own dimmer gives you a low evening setting that keeps the kitchen usable without lighting the whole room.
